Because they are poorly coached?
They have some speed, and some talent, but they made a lot of truly terrible mistakes. My definition of a good team is different than yours I guess. BYU is a good team. A handful of very good players, and pretty much everyone else is at least good enough to do exactly what they are asked to do. A lot of teams have that combination of skill, as does Houston. They have players with the ability to do what they must, but they don't do those things as often as they need to.

Good teams don't shank punts out of bounds ten yards downfield. Good teams don't let other teams get onside kicks without any resistance whatsoever. Good teams don't field punts at the 1 yard line.

TLDR; good teams don't have special teams units that are so bad that they cause you to lose games despite other units playing reasonably well.

IMO there aren't very many good teams in college football. As much as I love watching college football, there are a lot of bad football teams out there.
