Follow up on tritip - if cooking on the grill, does anyone just trim off the fat
cap? I can see how keeping it would be good in a smoker, but on the grill it just seems like a waste of surface area. I’m thinking of just taking it off completely.
Bad idea? Good idea?

Trim it off. The sear is important for tri tip and leaving the fat cap will ruin that.
