Spatchcock it and smoke it at 325. Pull it when the breasts are 150 and legs are
175. If you really want to nail the breast
And leg/thigh temps Quarter it and smoke legs/thigh and breasts separately. Pull each when done at their respective temps.

I usually do this regardless of bird size because I refuse to eat Turkey breast that’s 160 or above

Smoking at a lower temp puts too much smoke on the bird and I’m not a fan of that for Turkey.
