Last year, we went there the first full week the pandemic got real (which was also the week of the Utah earthquake) but were never able to fully relax due to worrying whether we'd be able to fly home (as well as worrying about potential earthquake damage).
So, hoping for a more relaxing experience, I booked it again for this year but with the new CDC requirements, it looks like we'd be in a similar situation as last year (at least with respect to worrying about being able to return home as planned).
Our new plan is to go to Arizona (Scottsdale and Sedona). Not as fun or exciting as Cancun but at least we won't have to worry about the return trip home (and hopefully my parents in Cedar City will be vaccinated by then so we can visit them over Easter weekend on our way back to Salt Lake).
