I smoked a pork shoulder on Sunday and it was my best one yet. I’m in Peoria, AZ
It was about 7.5 pounds. Smoked it at 300 for 4.5 hours, the wrapped for another ~4 hours around 275 and it was the most moist piece of meat I’ve ever made. Juices flowing out. Temps were around 205.

Oh and I let it rest for two hours and it was still steamy hot when I pulled it out of the tinfoil.
