225 is a great temp for low and slow Though I do 250 as often as not.
Below 200 won't get your meat where it needs to be. even with the best grills and best temp control it still fluctuates. 225 could go as low as 210 or as high as 240 lots of factors play into it. Especially ambient temp and weather conditions wind etc..

Now I want to do pulled pork haha
