Just put on two pork shoulders, going low and slow. Initial thoughts for the Gravity smoker are
It's a little more difficult to get good smoke than I would like, but it works. Relying on smoldering ashes to drop down onto the wood isn't the best.

The ambient control probe for the grill isn't the best (a little too slow of a response IMO) but it does hold pretty good. I think I'll get a fireboard 2 controller though at some point.

The build is pretty solid.

It gets up to temp quick, even for the 700 degree seer.

It's very easy to clean.

I put on a couple mods that should help with the smoke and the charcoal lasting even longer.

This is my first longer smoke with it (first was a tri tip) so I'll see what the consumption is like.
