Where are you going in the Uintas?

If you can catch a couple of decent fish, your menu options can become a lot more fun.

My favorite campfire meal is surf & turf. Fresh trout foil cooked in the fire along with a nice steak seared in a cast iron pan. You can do a baked potato foil cooked in the fire, or freeze dried shredded potatoes on the side.

Yes, it's my preferred method because of convenience.

You can do that, but it's essentially a frying pan with a lid--you don't get the baking action with heat from above

Exactly. We have a Camp Chef 3-burner stove, and we have both the 3-burner and 2-burner griddles.
