...turn down the heat on that side, and lightly heat the tortillas on the open end. A little shredded cheese and sour cream to finish, and it's awesome.

Yes, it's my preferred method because of convenience.

You can do that, but it's essentially a frying pan with a lid--you don't get the baking action with heat from above
