coaches know baseball. And then to just happen to draft all of them not knowing their real talent?

There are some parents who coach rec league or little league teams (very few) who know little about the game. Some are very good coaches who know baseball and played it quite a bit and others are middle of the road who know baseball and like it but maybe only played little league as a kid or something.

usually the coaches that are trying this kind of stuff know the game and want to be the best team, unfortunately its usually the best coaches that are doing this stuff not the random parent who wants to help out.

I guarantee you the coach knows what is going on, probably does the same thing every year and probably has one of the best teams every year.
