Welp, doing a brisket overnight and figured I'd try the trend that's sweeping YouTube BBQ videos by storm. Got a 14 pound choice packer, trimmed it up and spent a good 2.5 hours rendering the fat and got a little under 2 quarts of liquid gold.
I'm excited to try it in the brisket cook and for other things. Fingers crossed I don't screw up this brisket.
