Never seen anyone else make a cheese quesadilla this way:
- Butter one side of a flour tortilla
- Put the tortilla on a flat griddle or skillet (butter side down) on the stove
- Shredded cheese on one half of the tortilla
- Sprinkle plain old bacon bits on top of the cheese (I use McCormick's Bac'n Pieces but any kind of bacon bits would probably do)
- Chop up some red onion (however much you want) and sprinkle that on the cheese
- Fold the tortilla in half and lightly brown it on both sides
It's the bacon bits and chopped onion that's unique, at least I've never seen those 2 ingredients anywhere else. My mom used to make these all the time when me and my brothers/sisters were young. She preferred to use white onions but purple onions give it just a hint of sweetness, I think.
You can make this in a microwave but IMO they don't taste quite as good; I like just a little bit of crunch that comes from cooking the buttered tortilla on a flat griddle. I'm certainly not a chef in any sense of the word but these are very tasty.
