Basically its bacon and caramelized onions sweetened with brown sugar, made tangy with some vinegar, and a bit of cayenne for heat.
I had some on toast for breakfast today. My 9 year old asked if it was like the pan sauce I make for steaks (she saw me dice the onions and shallots) and tried it and liked it too, to my surprise.
And for lunch I made a PEANUT BUTTER SANDWICH: sourdough toast, chunky peanut butter and sweet/tangy/spicy bacon jam. Sounds a bit strange, but it was fantastic!
When I get some good cheddar I'll make cheeseburgers with ground elk/beef, bacon jam on the toasted buns. Looking forward to that!
