Sounds like thermostat. I’m changing mine. Pro tip, spray some PB blaster on the
bolts before removing. I sheared one off and now my 20 min job is turning into several days. Ugh!
(Your car may not be 50 years old like mine so there’s that)

When my vehicle does that it is low on coolant.

My wifes car was doing this the other day. It went cold while stopped, and heated back up as the car was moving.
