A server at a restaurant with cheaper meals is usually handling 5+ tables at a time, up to 20-25 a shift.
A server at a fine dining restaurant will handle 3-5 tables a shift, maybe 1-3 at a time.
I made a little more at the fine dining place, but not as much as you’d think. And the workload was similar. People expect excellent service if they are paying a lot, and rightfully so. It’s also a lot harder to get a job at a fancy restaurant.
