Was just typing up something similar...and I agree.
I worked at both Chilis and then at Sundance back in the day. Turn and burn versus more of a dining experience. Servers at more fancy places also manage their tables and meals, meaning they keep tabs on where each table is in their courses and make sure to have the kitchen fire things on time.
