Don’t throw that turkey carcass away.
Break the carcass down into a few pieces and put it in a stock pot with a chopped onion or two and some garlic. Boil for a couple hrs at least, I usually go 3-4 hrs. Makes a rich broth. Remove bones and cartilage but leave meat.
Add more meat if you want along with kosher salt and whatever vegetables you want and you’ll have some good soup. You could add some andouille sausage and okra and make a turkey gumbo if you want
