Baby back ribs today. The best ones I've done in a while...
I've been doing ribs for years but my results had been inconsistent over the last year or two. Think I wasn't paying attention to details and so sometimes there would come out a bit dry.

But not today...

I have a recipe for pork rub, that's basically a copy of Famous Dave's rub. I've been using it for years and it's great for pork whether it's ribs or pulled pork.

First thing I did, was I made sure to have a pan dull of water to the side to keep them moisture up in the smoker. Not sure why I had forgotten this detail, but doing that made a difference for sure.

Next, I've toyed with wrapping them or not. This time I did wrap them, but I did not do the 221 method. I like a pretty heavy smoke flavor and so I let them stay on the smoker for 3 hours, then wrapped them for an hour and then took them out of the foil for the last hour. This brings to them but not too much.

My family prefers the ribs to be dry so I don't put any sauce on them and just have the sauce there for people who want it, which I guess is the Texas style anyway so yeah.

Anyway, they came out great. Everyone was happy.

By the way, Costco has a barbecue sauce now that doesn't have any sugar in it, but still taste really good. We had that as our barbecue sauce and it really compliments the ribs.
