Brisket was done at 4am. Lunch is at noon
I put the brisket in a Yeti cooler wrapped in foil. Hoping it’s ok, 8 hrs seems like a long time

The longer it rests the better as long as it stays warm. Should be great.

Once it cools down too far you can keep it warm in your oven or a convection oven.

I’ve never kept it for that long, but I have kept it in a cooler with towels for like 5 hours before. Was still hot

Start it in the morning the day before. Put your oven on warm and hold that sucker for 16+ hours.
