enough to burn you when I took it out. I’m guessing 8 hours is fine. If you’re worried about it cooling too much, stick a probe in it while in the cooler.

Once it cools down too far you can keep it warm in your oven or a convection oven.

Start it in the morning the day before. Put your oven on warm and hold that sucker for 16+ hours.
