Honestly - I look at most expiration dates similarly.
I figure they aren't 100% accurate as to when stuff will go bad and don't want to deal with the liability of someone's food going bad and then them eating it - even though it's before the expiration date.
So I assume that they under-estimate when it will go bad as far as giving it an expiration date printed on the package - and there's no way it will go bad within a day or two of that.
Still - when grabbing a gallon of milk at the store I tend to look for an expiration date that is as far out as possible when there are jugs with different dates on them.
