Smokers… what timeline are you more comfortable with…
I’ve got 2 roughly 7 lb boneless pork butts from Costco. Cooking on a pellet smoker. First time doing this. I read through this thread linked below, and it answered most my questions. I’m just wondering what you think…

Relevant times…

1) going to BYU game, leaving at about 6, home about 12:30.
2) church is 12-2
3) dinner served at 5

So, do I…
1) put them on before leaving for the game at 225. See where they are when I wake up. Probably rest and shred before church, then warm up before serving. Or…
2) put them on before bed at about 1 a.m. at 225. Hope they’re done not long after church ends. Potentially wrap and bump up temps before going to church.

Thoughts?
