You doing the whole bird or just the breast? I’ve only smoked the breast. I

smoke it without the skin. Right before it gets to temp, I turn the smoker up to 350 degrees and add a little chicken broth to the pan. I smoke it another 15 minutes or so and that gives it a nice brown outer rim. 
Haven't tried the mayo idea that conflictedco suggests above, but I might give that a shot.
