I looked this guy up and the first Turkey post is a full turkey rather than what
you mention so that was kind of funny. I did find his spatchcock example and both look good.
Interesting that he brines the full bird but not the spatchcock. Have you done it the way he does without brine? No big deal as I didn't brine my breast that I did last week and it was juicy for sure.
