As someone who just did a lot of research and shopping before buying my
2018 F150 2.7L Ecoboost, I would get just that, but only if you don't plan on pulling something very heavy. In that case, I would get the 3.5L Ecoboost, which has more torque than the V8.

The 2.7L engine gets 24 MPG on the highway. In a full size truck! And, it scoots when you want to. I paid $26,500 for it. It has 69,000 miles.

I love the sound of a V8, and I have one in my Mustang, so I get my fix there.
