We only use the State Park Ramp in Provo so I'm not much help on Saratoga.
The depth really isn't an issue if you don't get within 500 feet of shore. 500 feet gives you 3-4 feet of water. We stick to a thousand feet or more from shore and it's consistently 5-6.5 feet deep. Obviously the middle of the lake is even deeper than that.

We always use our fish finder to monitor the depth so we don't end up going to shallow.
