Guacamole
3 Jalapeno Peppers (1-2 if you don't want it spicy)
1 Chopped White Onion
3 chopped roma tomatoes
1/4 C. Chopped fresh cilantro.
4 Avocados
1 Orange
Salt
Lime

Dice the jalapeno peppers (remove the seeds if you can't take the heat - leave them in if you want to spice up your life). Saute them in olive oil on medium heat (about 5 minutes). This will soften them up a bit and also mellow them out.

Dice the white onion. Put it in a small strainer and run some cold water over it (takes some of the bite out of the raw onion). Shake off the excess water.

Chop up the tomatoes.

Peel the orange and remove as much of the white outer skin off of it as possible. Cut it up into very small pieces.

Chop up (very fine) 1/4 cup of FRESH cilantro.

Put the diced jalapeno peppers, onions, tomatoes, cilantro, and orange in a bowl and mix it up with a fork. Food processor is optional if you want a really smooth mixture. Some folks prefer chunks off goodness in the guacamole.

Skin your three avocados and toss them in the mix. Mash it all up with a fork until it looks like... um... uh... Guacamole! Again....food processor is optional.

Squeeze the juice of half or all of the lime into the mixture and add salt to taste.

It's better if you let it sit for a while before you eat it.

Put it in a bowl that is "just right" for the amount of guac you have. Cover the guac w/ saran wrap (put the saran wrap right down to the level of the guac).

Enjoy the best guacamole you've ever had.
