Start with a butt or shoulder, minimizes the pain and suffering that always...
accompanies brisket un-initiated.
Fwiw, I wrap mine in foil at about 165 to avoid the stall, but based on my hit-or-miss success with briskets, you probably shouldn't follow my advice.
