Ripping is not a real big time burner. About 5 minutes of engaged time to get the rip going, and then I'm back to my other stuff. Then, before going to bed, I set all the ripped DVDs for that day to encode during the night. Doesn't take a whole lot of time.

In my opinion, Plex is way better than using DVDs. It gives you much better options going forward as well.
