Nick's offensive role is going to diminish no matter what because of Seljaas and Bergersen coming in, as well as Payton Dastrup likely stepping up. Rose could also pick up another recruit or transfer guard. That will suck for Nick, but my guess is that he likes the team enough and that there is enough history for him to stay.
He'll still have his moments and I expect that he will continue to mature as a player. There will be games that the cougars will win because of him, and he knows that. At the same time I doubt that he will single-handedly lose games for them going forward. If anything, a stronger focus on defense gives him an advantage over other players *cough, TJ, cough*. Nick takes more pride in playing defense than almost every player on the team, and a guy like Heath good help foster that even further, especially if his role is to lock down the opposing pg.
Keep in mind that Schroyer has a year on his contract at NCST and is set to make $310,000 next season, even though he was let go. I don't know if BYU could match his price, even though his current contract states that NCST will still pay the difference. Besides, he can get another P5 level position if he wants.
