I have no insight on the Olympics but in terms of Paris, been there 7+ times
I personally like staying out of the city in the Le Defense area. There's a Renaissance hotel up there that's nice. It's the business district with accompanying shopping and restaurants. It's out of the tourist chaos and is a short train ride into the city.
The best part about Paris is just to wander around and get lost.
