Thinking on your 2nd question...
...I believe that it is important for the offense to score some points, putting the other team behind. I also believe that it important to not allow the other team to successfully put together a long drawn out drive.

I know that seems like the "no duh" statement of the year, but it's also the reality.

It doesn't matter if your offense has a quick possession as long as your defense holds the other team to 3 plays and a punt.

And if you get some points on the board, the defense doesn't feel like they are fighting an uphill battle all the time, which keeps them energized, even if the time of possession stats are skewed in the other teams favor. Of cours, you do need to keep scoring in that case, because the wear down becomes more real later in the games.
