I participate in a pheasant hunt every February to raise some cash for a local charitable organization. The hunt is tomorrow, and I'll probably end up with about 20 birds (already cleaned and breasted out). Pheasant, to me, is kind of meh. I haven't found a way of preparing it that makes it taste great to me. There are probably 100 different types of meat that I'd pick to eat before I'd pick pheasant. Yet it's supposed to be a great delicacy. What am I doing wrong? What's the best way to prepare it?
