It's a completely different park without children.
And in a good way.

We go there as often by ourselves as we do with children/grandchildren and have a great time. Our schedule is different, when by ourselves, we can navigate the park much easier and can pace ourselves. We have influenced our married children to do the same and they have reported that they all enjoyed the park in ways not possible when herding children.

Circumstances have been such that we found ourselves in Disneyland twice in the past 11 months. Once with our California-resident son and daughter-in-law and recently with four other couples. It was a blast. We opened and closed the park on each occasion.

When we go with children, we see the park through their eyes. As a couple, we see the park through our eyes. In both cases, the park is, as the commercials say, a magical place.
