Football dimensions differ if you count Canadian football. The camber definitely varies. Field goal poles used to be different between college and the pros and have changed over time in both games. Some fields ate artificial turf of different materials, some are natural grass.
Track surfaces differ track to track. Some are harder and significantly faster than others.
The Boston Garden used to be known for having dead spots, and a peg in the parquet just off center at the free throw line to mess up free throw shooters. Every court is designed different with different woods and color combinations. Some like the Marriott Center are springier than others. The three point shot distance is different between the pro, college, and international games. The key in the international game is shaped differently. The rims are hinged, making them much softer than 35 years ago.
Baseball has the most variation, and yes it makes the game more interesting. I have heard many people who have visited every ballpark. I have never heard any fan who has been to every NFL stadium or NBA arena.
