Coaches sandbag.
When playing someone they know they will beat handily, many coaches will try different plays for people, or scenarios for the experience, or also to not tip their hand.

Kyle Whitingham said he held back on the defense the first three games in order to have some new looks for Oregon. I don't think he's the only one that does this especially when they know they're playing a lesser opponent and feel they can easily turn it around if things get out of control.
