The conversion to gelatin happens either way. I think if you wrap it at 160 you have gotten all of the smoke flavor it will take anyway. To each his own. I would be a lot more meticulous if serving other BBQ guys. I usually serve people who can't tell the difference between good q and adequate q. That isn't worth an extra 7 hours to me.
