For long time Utahns who aren't ignorant of the historical background behind pioneer day, it does 2 things: it takes a shot at the dietary restrictions of a religious group, but more importantly it strips away the historical significance of the holiday.
None of it is a big deal. None of it offends me. But if I were outside of Mormon culture and I knew that it was a minor annoyance, I would avoid doing it out of respect. It's uncool, but not a big deal.
