Update on my situation...
Stool samples were normal. All blood samples were normal except White Blood Count was slightly elevated and my EOS (Absolute) value was 1.8; normal is 0.0-0.4. This is indicative of either a parasite or food allergy/sensitivity.

I had blood drawn yesterday for food allergy testing but results will take 1-2 weeks.

I have a colonoscopy and upper GI endoscopy on Monday.

After reviewing what I have been eating and then the results I believe I have come down with a sensitivity/allergy to gluten. For those currently dealing with this you will understand but almost everything is made with wheat and trying to find things that don't contain wheat is a PITA. After reviewing everything in the pantry and what is available for snacks in the cafeteria, I'm now going on a bacon-wrapped peanut M&M exclusive diet.
