I only know one person who has passed century mark.

He is 103 and would happily die the day he hits 107. He is literally only interested in hanging on so he can say he has lived longer than any known person in his ancestry--a truly useless and soon to be forgotten record.

Almost to a person, everyone I've known past the age of 90 would happily die at any time.

Nitrates are added to processed red meat. Not typically found in raw meat.
