Wise, wise choice on the trusses! Hanging sheetrock isn't too bad. Taping, too.
Mudding?......now that's another story. That's the hardest trades skill I've ever tried. Anyone can slather on a ton of mud and sand it off but to put on just enough and get it fairly smooth is a true art.
(Taping: that is, if you use the self-adhesive mesh stuff. If you use the paper then you're already into the mudding which is a pain in the rear IMO.)
