I'm happy for Utah Hockey
I have found it to be really fun to watch but it didn't start out that way.
While I was on my mission, the Stars moved to Dallas. They were good initially and by the time I wrapped up BYU, we moved to Dallas in '98 and the Stars were quite good. My job provided opportunities to go to Cowboy, Maverick and Ranger games but the Stars tickets were the hottest tickets in town and I never went. I struggled initially to get my head around the sport. I had no soccer background to lean on and watching on TV isn't the best because it's hard to watch the puck and you can't really get a sense of line changes. Nonetheless, the Stars were good and that made it fun. Ultimately they won the cup and while the Cowboys had won in 94, there was a real dearth in prosperity among the other organizations in 99. That meant the Stars were the king of sports in Dallas, at least until the Cowboy training camp started.

I moved from Dallas in 99 and continued watching random Stars games on cable. Then the 04/05 lockout happened. The roster turned over, hockey was rarely on, and I stopped watching. I remember however that there were some significant rule changes that came out of that lockout. I didn't really understand them but word was it made the game better. Still it didn't matter much because I no longer lived in Dallas, rarely saw them on TV, and they weren't that good.
During the pandemic, the Stars made a legit run at the cup. That meant they were back on TV for the playoffs. As I watched, it quickly became evident, that it was way better for TV viewing. Stars didn't end up skating the cup but I was back in on hockey. Now, I'll regularly have a Stars game on throughout the season.

So what makes it interesting/fun to watch?
Speed and puck handling - I really think the high definition broadcast have made a huge difference here. Take a look at this save: https://www.youtube.com/watch?v=QozFa947T-w I don't think you see this on early 2000's broadcasts. It's not just the saves though, it's movement with the puck and finessed movements of the stick.
Power plays - There just fun.
Play to the end - Probably my biggest gripe with basketball is the fouling at the end of a game. Hockey games have a real press of intensity at the closing of most periods.

If you have ESPN+ (I picked it up when BYU got their contract), you'll get every NHL game. If you're new to Hockey, pick a team and start watching. Afterall, it looks like the Jazz will be a bit flat for a while, so it's time to get to know a new team.
