Mtn Biking is the right answer. You can get a full day e mtb rental for ~$100
If you want more hiking, the buffalo river valley is pretty cool, but that's 90 min east.
Also I have been yet but I'm planning on hitting up WOKA Whitewater park this summer. It's probably 45 min West.
