It adds fat/grease, but does it really change the taste?
I think the OP might be right.
I think the essentials are the meat, mayo, and ketchup. My brain likes the grease, so the cheese is good. But I am not really tasting the cheese.
A nice grilled cheese sandwhich, however, is heaven due to the cheese.
