Prime rib's problem is there is no seasoning on the inside. The cook and texture
can be good, but for heaven sakes it needs some salt and pepper. I love the outside of the roast (just like steaks) because of the all of the smokey - char - salt- seasoning. The inside can retain moisture and be tender, but I like steaks way better than prime rib because I get way more outside.
