I noticed a couple years ago that many teams were hiding smaller defenders on
the other teams' bigs. GSW did it against JJJ for Memphis. JJJ scored a bunch of points. But as long as 3 > 2, it's not a terrible strategy. If the opposing center shoots 50% from 2, but you play small with 5 good shooters, you are probably ok (assuming you don't get into foul trouble). Jokic, and maybe Embiid, are the only 2 centers who will absolutely end you if you attempt to defend them that way. That's not to excuse Gobert. He's particularly awkward when he gets the ball. But traditional centers just don't have the impact that they once did.
