I highly recommend going to Chiang Mai. The city and food were great.
We spent a day at Thai Elephant Home and it was hands down the highlight of the trip. http://www.thaielephanthome.com/
IMO the best restaurant in town was Dash! Owned and ran by a Thai lady that lived most of her life in Seattle. Retired and moved to Chiang Mai to open a restaurant with her son Dash.
