We really like the mozzarella from Harmon's that comes in the bag full of water--you can't really cut it, you just break it up and throw it on top. Usually we just do sauce (it's a little spicy), mozzarella, basil and artichoke hearts. I'll post the recipes when I get home. We bake it on our Big Green Egg, giving it that wood fired taste. That's one of the reasons I love the Big Green Egg--you can bake, direct grill and smoke. Here's an example of baking pizza on a Big Green Egg:
