That would be kind of hard since every major neighborhood and village even in cities like Shanghai have 'wet' markets,
which are really mostly OPEN markets like a farmers market, except they have fresh butchered pork, beef, chicken (used to be live chickens they would clean for you, now that's stopped since avian flu), and fish, eels, shrimp, crabs, etc. Of course eggs, vegetables and fruit, vendor stalls with noodles, wanton and dumpling skins, and condiment shops.

But I've been here 20 years, and they aren't going anywhere.
