I use a good garlic steak rub like a Santa Maria seasoning, then I add rosemary and then coat with mayo. I season the top lightly and add lots of cracked pepper.
I then wrap it in aluminum foil with the top half open and smoke it at 225. Smoke for an hour or so (check meat temp) and then crank it up to 350 for 10 minutes to cook down the mayo a bit.
If frozen solid I cut it in half after two hours just before I crank up the temp to finish it off.
